Description
What am I: Quinta do Javali is a small property of about 18 hectares. It is located along the left bank of the Douro River in the parish of Nagoselo do Douro – São João da Pesqueira, in a place with a history of wine production as old as the region itself.
The Clos Bonifata line demonstrates the purity, respect, and uniqueness of the Clos Bonifata terroir, located in Ervedosa do Douro; and you taste this progression from the vineyard to the glass.
Attention is paid to immaculate soil work, and vineyard maintenance is patiently carried out with horses. Respect in agricultural work throughout the vegetative cycle of the vine and in the winery, by applying principles of viticulture and biodynamic enology which includes the use of the lunar calendar, flower days, fruit days, root days, leaf days, biodynamic preparations, and macerations of plants.
The purity found in the wines is a direct result of the fermentation with minimal interventions. Fermentation takes place in a concrete vat with a rare and innovative spherical shape. It was exclusively built with the incorporation of soil from Bonifata’s own terroir. Aged 18 months with bâtonnage. The wine is not stabilized by cold and only has a light filtration.
The wine is a lemon color with greenish tones. It has a peculiar nose, marked by floral and granite notes. In the mouth, the acid freshness is in harmony with the minerality of the Clos Bonifata terroir.
