What am I: Quinta do Olival Murta has been in the same family for over four generations. It is located about 80km from Lisbon, on the Serra Montejunto, near the medieval town of Obidos. Serra Oca wines are hand-harvested from vineyards where organic practices are used, and the wine is fashioned in the cellar with no chemical additions through spontaneous fermentation. The farm is also well known throughout the area for its herb growing programs, reforestation efforts, and whole-system approach to agriculture.
Total destemming without crushing, with fermentation in separate lagar with spontaneous yeasts. Completion of malolactic fermentation in stainless steel vats, with minimal addition of sulfur. This red wine was aged for 18 months, in 225-liter French oak barrels, and then aged in bottle for 15 months.
Serra Oca Tinto 2014 red wine is ruby in color, with an aroma of fresh wild fruits and spices. The palate is very fresh and intense, with the wood very present.
