What am I: Vitor Claro started Dominó in 2010, after years working as a chef and running his own restaurant, ‘Claro’, in Paço de Arcos, a resort town outside Lisbon. Along with his wife Rita, they make the Dominó Colar wines from Colares; the coastal vineyards outside of Lisbon. These consist of a white and a red and showcase the structure and salinity produced from this wild landscape.
All of the vineyards they use are worked organically and the grapes are watched carefully as to avoid overripeness. In the cellar they use a subtle hand, with short extractions, spontaneous fermentation, no corrections, low sulfur use, and very light filtration.
The Dominó Colar white wine is made from 100% Malvasía. These are younger vines that average ten years of age and are planted in clay-limestone soils. The grapes are manually pressed and fermented on the lees. It is aged 50% in used barrel, and 50% in stainless steel. This wine is bottled without filtration.
