What am I: Vitor Claro started Dominó in 2010, after years working as a chef and running his own restaurant, ‘Claro’, in Paço de Arcos, a resort town outside Lisbon. Along with his wife Rita, they make the Dominó wines of several different regions; this hails from Torres Vedras, just north of Lisbon. Las Vedras is a collaboration with Pedro Marques of Vale da Capucha.
All of the vineyards they use are worked organically and the grapes are watched carefully as to avoid overripeness. In the cellar they use a subtle hand, with short extractions, spontaneous fermentation, no corrections, low sulfur use, and very light filtration.
The Dominó Las Vedras Tinto red wine is made from Castelão. Light in color but bold in structure, this is a wine that shifts and changes the longer you have it open. Take a sip when you first open the bottle and sit back and follow it as it blooms. This wine is bottled without filtration.
Very small quantities produced.
